Day 6 of being diagnosed with type 2: stuffed cabbage (with cauliflower rice substitute in filling), avocado, big spinach salad with feta crumbles and anchovy dressing. Wow...I miss that slice of french bread! Really, really, really....

One of my favorite go-to snacks: Preheat oven to 350. Slice zucchini in 1/2 inch slices & place on greased cookie sheet. Bake for 15 minutes. Remove from oven & top each slice with a teaspoon of pizza sauce & a sprinkle of mozzarella cheese. Return to oven for 5 more minutes. Enjoy! I also enjoy these cold but then I used to eat cold pizza too.

Last night I made asparagus in the air fryer. Drizzled lightly with olive oil, added 2 tablespoons of bacons and at the end lightly sprinkled mozzarella cheese over it.

Amazing Lyssa! I was given an air fryer recently, and am in love with it. It's great using less oil, but still getting crispy veggies that cook quickly.
