Day 6 of being diagnosed with type 2: stuffed cabbage (with cauliflower rice substitute in filling), avocado, big spinach salad with feta crumbles and anchovy dressing. Wow...I miss that slice of french bread! Really, really, really....

Wow! That sounds delicious, thanks so much for sharing! What did you put in the stuffed cabbage? Just the cauliflower rice? It sounds like you're off to a great start, being less than a week in. I think a misconception is that when you have diabetes, you can't eat any good food. But there's a lot of good food one can eat, they may need to be a bit more creative though. Also, it's really normal to miss certain foods especially since you're newly diagnosed. But maybe you can find substitutes? One of my favorite go-to snacks: Preheat oven to 350. Slice zucchini in 1/2 inch slices & place on greased cookie sheet. Bake for 15 minutes. Remove from oven & top each slice with a teaspoon of pizza sauce & a sprinkle of mozzarella cheese. Return to oven for 5 more minutes. Enjoy! I also enjoy these cold but then I used to eat cold pizza too.

Love it! Thanks so much for sharing. It sounds really easy to make and also very tasty! Zucchini is one of my favorite vegetables, it is so versatile.

Thanks for sharing your experiences! I can see how liking to cook could make it easier to lose weight because it can be more enjoyable to find new healthy recipes to make and you get to better control what kind of food you cook with and ultimately eat. Last night I made asparagus in the air fryer. Drizzled lightly with olive oil, added 2 tablespoons of bacons and at the end lightly sprinkled mozzarella cheese over it.

Amazing Lyssa! I was given an air fryer recently, and am in love with it. It's great using less oil, but still getting crispy veggies that cook quickly.
