What Have You Eaten Today?

This eating right thing is not easy. I need some suggestions for trying to live a healthy lifestyle. I have T2D, but just got diagnosed with chronic kidney disease. All I hear is diet, diet, diet!!!!

This is what I had today: Breakfast - 2 boiled eggs and 2 slices of bacon. Lunch - vegetable soup from a can and store-bought roast chicken breast. Dinner - baked salmon and mixed vegetables. I drank 2 bottles of water and 1 diet soda.

To be honest. I am not satisfied with my food choices and just want to eat ice cream and cake.

I would like to know what your daily meals look like. What different foods do you eat?

  1. Well for dinner we have chicken cooked in the actifryer and veggies and small baked red potato or broccoli with mushrooms with some herbs, breakfast boiled egg and oatmeal.
    Lunch sandwich and raw veggies you can have tuna on your sandwich or a small 6 inch sub from Subway whole wheat I get them to pull some of the bread out of the bun, and have turkey, green peepers, some olives, little bit of onion some mayo and a slice of orange cheddar cheese, with a small Diet Pepsi these are some ideas or a bottled water.

  2. Not sure if this would be okay for you I don’t know your health history, it’s trial and error, and what works for you, and depends how your sugars are, it’s different for everyone. Some snack idea, small orange with some almonds, or and apple. Apple with some peanut butter cut up apple in slices and dip into peanut butter, small bowl of popcorn healthy popcorn I have it in a cereal bowl. Whole wheat crackers with peanut butter.

    1. I’ve only tried hummus once and didn’t care for it. I like crackers with low fat cream cheese. The problem I found is I get hungry I feel sometimes it’s not enough and at night I have a hard time going to bed at a decent time since my mom died I miss her so much and it hits at night time, then I eat all pretty healthy though, my mom and I use to talk on the phone every night and I miss that soooo much. And right now her anniversary is coming up and really missing her hard to sleep. I really don’t think I will ever stop grieving her. And diabetes gives me such stress. My mom would listen to all the ups and downs of this disease, and now I don’t have that anymore plus we would talk about Christmas plans and go shopping together and now I go by myself it’s really really hard. There’s so much to grief that others just don’t understand. I feel so lonely with out her. She was my rock.

    2. My heart aches for you, . What a wonderful bond you and your mother had. Grief never leaves us, but it can change over time. I lost my sister to breast cancer a few years ago. In the beginning, grief was relentlessly, hitting me with one wave after the next, never giving me a chance to breathe. But after a while, I took my brother-in-law's lead. He encourage his children to celebrate who she was and the time they'd had with her instead of always mourning her loss and thinking about what might have been. It took a while, but now I think of the good stuff when I think of her and it warms my heart. I hope that eventually happens for you. Have you considered putting yourself out there a bit, maybe joining a social group or attending events at a library or museum, places where you might meet other people? You'd be suprised how many other people are out there like you. You might even meet someone who also has a huge void to fill during the holidays and needs a friend to help her through it.     1. Hello , Losing a mom is a hard one and most people won't understand that grief until they have been there. Just take each day one day at a time.


      I don't like hummus or cream cheese, but I do like fruits. The sad part is that I always find a way to make something healthy - unhealthy. I just want to eat all the time.


      Did you and your mom cook Christmas dinner together? Was there a special dish that you both liked that was diabetic-friendly? Thanks for sharing with us.
