Anyone has problems with Blood Sugars with Long Haul Covid

I have Long Haul Covid. Since then, I have had a harder time with keeping my sugars low. I just got a CGM samples for 40 days. I wake up between 6-8 am. I drink water and my sugar goes up 30 points. It is not the Dawn Phenomenom. I usually have a smoothie then with mixed greens, boil egg, MCT oil and collagen protein. When I go to the gym, my sugar climbs from 160's-190's or so up 40 to 50 pts. from the breakfast. It takes me two hours of cardio/weight training to bring it down to about 120-150. I have no carb protein/whole kefir (8 oz)after gym,s and it goes up about 40 points. Then about a few hours later I have my main meal(by 4 pm) about 30g carbs and I exercise lightly after I eat to keep my sugar down. My body doesn't seem to produce much insulin anymore. I am working with a dietician. Metformin in the past didn't work much for me. I am thinking I am a candidate for insulin. I try to use lots of olive oil and MCT oil. The result is that I lose weight and muscle. I try to get 70-90 g of protein. I want to keep my weight and gain some. I have lost about 15 lbs since Covid. I am a thin 141 lbs and am 5'10"
