Type 2 Diabetes Diet for Vegetarians

My name is Suzy and I was diagnosed with Type 2 in 2015. I’ve been on 2,000 mg metformin since then. I’m 62 years old. I had a hemorrhagic stroke in December of 2018. I’m a vegetarian (lacto but not ovo, I don’t eat eggs). I’ve been able to keep my A2c below 7 so far but it’s harder all the time. I’m having a difficult time eating less carbs. Any other vegetarians who have ideas about protein and cutting carbs?
