Good Carbs vs. Bad Carbs

It’s pretty easy to blame carbohydrates for our diabetes challenges. After all, it is carbohydrate foods that send blood glucose levels rising. But, does that make all carbohydrates bad? Or, just some carbohydrates? (Or, maybe no carbohydrates?). As a registered dietitian nutritionist, certified diabetes educator and someone who has successfully managed her own diabetes for longer than 45 years, Toby Smithson has something to say about “good” carbs versus “bad” carbs.
