Taco Lettuce Wraps

These tacos are both low carb and gluten-free! I love substituting taco shells for butter lettuce as it gives an extra crunch and reduces the carbs in the meal. Feel free to add salsa, cheese or other toppings you usually add to your tacos.

Makes 4 servings
Serving size: 3 tacos each

Ingredients for taco lettuce wraps

  • 6 mini tomatoes, diced
  • 1/2 lb ground beef
  • 1/4 cup corn
  • 1/4 cup black beans
  • 1/2 avocado
  • 1/2 packet McCormick taco seasoning
  • 12 leaves butter lettuce

Directions for taco lettuce wraps

  1. In a large frying pan, cook ground beef for 10 minutes, until completely cooked.
  2. On a cutting board, dice tomato and avocado.
  3. Once the ground beef is cooked, add in tomatoes, corn, beans, avocado and taco seasoning and mix together.
  4. Scoop mixture into each butter lettuce leaf and serve.
