Shrimp Lettuce Wraps

Butter lettuce is a great plate to add any protein and veggies to. For this dish, I added colorful veggies and shrimp to make a tasty fresh lunch or light dinner.

Ingredients for shrimp lettuce wraps
- 3 leaves butter lettuce
- 1/4 cup shredded carrots
- 1/4 red bell pepper, sliced
- 6 jumbo shrimp
- 1/4 cup chopped green onion
- dash cayenne pepper
- dash garlic powder
- 2 tsp coconut oil
Directions for shrimp lettuce wraps
- In a medium sized pan, cook shrimp in coconut oil, flipping to cook both sides.
- On a cutting board, slice bell pepper into thin slices, then in half.
- Fry carrots and bell pepper in a separate pan in coconut oil until lightly browned.
- Add cayenne pepper and garlic powder to veggies.
- On a plate, lay out butter lettuce, then add cooked veggies. Finish by adding 2 shrimp to each leaf and serve.
