  • 1 ¼ cup whole wheat flour
  • ¼ cup rolled oats
  • ½ tsp salt
  • 1 ½ tsp baking powder
  • 1 tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • ⅓ cup Truvia Cane Sugar Blend
  • ¼ cup milk
  • 1 cup pumpkin puree
  • ¼ cup vegetable oil
  • 1 large egg
  • ¼ cup dark chocolate chips

Directions for dark chocolate pumpkin muffins

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Coat muffin tin with nonstick spray.
  3. Combine dry ingredients (whole wheat flour, rolled oats, salt, baking powder, pumpkin spice, cinnamon, and Truvia Baking Blend) in a medium-size bowl.
  4. Combine wet ingredients (milk, pumpkin puree, vegetable oil, and egg) in a separate bowl.
  5. Add the dry ingredients into the bowl of wet ingredients.
  6. Mix all ingredients together.
  7. Use cookie soup to portion batter evenly into each muffin well.
  8. Bake muffins at 350 degrees for 15 to 18 minutes.
