Baked Rosemary Artichokes

These artichokes are a perfect appetizer to pop into the oven and increase your veggie intake.

Ingredients

  • 2 artichokes
  • 4 tbs. olive oil
  • 1 tbs. minced garlic
  • 1 tbs dried rosemary

Makes 4 servings

Directions

  1. Preheat the oven to 350F.
  2. On a cutting board, cut each artichoke in half.
  3. In a small frying pan, warm the olive oil on low/ medium heat then add garlic and rosemary and heat for an additional 1-2 minutes.
  4. Spray a 9x9 glass pyrex with olive oil
  5. Place the artichokes into the pyrex with the cut side facing up.
  6. Drizzle the flavored olive oil onto each of the artichoke halves.
  7. Bake artichokes in the oven for 45 minutes, until they are soft.
