Arugula Egg Scramble

Ingredients
- 2 eggs, scrambled
- 1/2 cup arugula
- 1 tbs. shredded carrots
- 1 cherry tomato, sliced
- 1 tsp coconut oil
- 1 multigrain corn thin
- 1/4 avocado, sliced
- Pepper to taste
Makes 1
Directions
- Scramble eggs on a medium sized pan after heating coconut oil.
- Arrange arugula, shredded carrots and sliced tomato on a plate.
- Add scrambled egg to plate then top with pepper.
- Slice avocado, add on top of the corn thin, then add onto the plate.
