Arugula Egg Scramble

Ingredients

  • 2 eggs, scrambled
  • 1/2 cup arugula
  • 1 tbs. shredded carrots
  • 1 cherry tomato, sliced
  • 1 tsp coconut oil
  • 1 multigrain corn thin
  • 1/4 avocado, sliced
  • Pepper to taste

Makes 1

Directions

  1. Scramble eggs on a medium sized pan after heating coconut oil.
  2. Arrange arugula, shredded carrots and sliced tomato on a plate.
  3. Add scrambled egg to plate then top with pepper.
  4. Slice avocado, add on top of the corn thin, then add onto the plate.
