Zesty Chicken Instapot Tacos

This dish truly packs a flavorful punch! Topped with a crunchy slaw, these tacos are loaded with spices, herbs, and citrus for the ultimate flavor explosion. Ingredients for zesty chicken Instapot tacos

Chicken Filling:

  • 1/4 tsp chipotle powder
  • 1 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tsp dried oregano
  • 3/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb chicken tenders
  • 1/3 cup lime juice
  • 1/4 cup red onion
  • 1/3 cup chopped cilantro
  • 1 tbsp olive oil
  • 1/2 cup low sodium vegetable broth
  • 1 avocado
  • 6 small corn tortillas

Slaw:

  • 4 cups of shredded red cabbage
  • 2 tbsp mayonnaise
  • 1 tbsp plain yogurt
  • 1 tbsp sugar
  • 1 tsp apple cider vinegar
  • Sprinkle of salt

Optional toppings:

  • Mexican cheese
  • Sour cream

Directions for zesty chicken Instapot tacos

  1. Combine chipotle powder, cumin, smoked paprika, oregano, garlic powder, onion powder, salt, and pepper. Mix until all spices are fully incorporated.
  2. In an Instapot, add vegetable broth, onion, chicken, and half of the seasoning mix. Cook on high for 20 minutes.
  3. In a large bowl, wash and shred the cabbage.
  4. Add the mayonnaise, yogurt, sugar, and vinegar to a large bowl. Mix ingredients until fully incorporated with cabbage.
  5. Remove chicken from Instapot. Place on cast iron pan with olive oil.
  6. Add remaining seasoning mix to chicken.
  7. On medium heat, continue to cook chicken until slightly charred.
  8. On a corn tortilla, add chicken, slaw, and avocado.
  9. Top taco with sour cream, cheese, or tomato, if desired.
