Zesty Chicken Instapot Tacos

Ingredients for zesty chicken Instapot tacos
Chicken Filling:
- 1/4 tsp chipotle powder
- 1 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1 tsp dried oregano
- 3/4 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lb chicken tenders
- 1/3 cup lime juice
- 1/4 cup red onion
- 1/3 cup chopped cilantro
- 1 tbsp olive oil
- 1/2 cup low sodium vegetable broth
- 1 avocado
- 6 small corn tortillas
Slaw:
- 4 cups of shredded red cabbage
- 2 tbsp mayonnaise
- 1 tbsp plain yogurt
- 1 tbsp sugar
- 1 tsp apple cider vinegar
- Sprinkle of salt
Optional toppings:
- Mexican cheese
- Sour cream
Directions for zesty chicken Instapot tacos
- Combine chipotle powder, cumin, smoked paprika, oregano, garlic powder, onion powder, salt, and pepper. Mix until all spices are fully incorporated.
- In an Instapot, add vegetable broth, onion, chicken, and half of the seasoning mix. Cook on high for 20 minutes.
- In a large bowl, wash and shred the cabbage.
- Add the mayonnaise, yogurt, sugar, and vinegar to a large bowl. Mix ingredients until fully incorporated with cabbage.
- Remove chicken from Instapot. Place on cast iron pan with olive oil.
- Add remaining seasoning mix to chicken.
- On medium heat, continue to cook chicken until slightly charred.
- On a corn tortilla, add chicken, slaw, and avocado.
- Top taco with sour cream, cheese, or tomato, if desired.
