Tofu Bowl

This quick tofu bowl recipe was inspired by taking leftovers from the refrigerator, adding some seasoning, and heating it all up in a frying pan.

Ingredients for tofu bowl

  • ½ cup cooked rice stick noodles
  • 1 cup firm tofu, chopped
  • 1 cup kale
  • ¼ cup chopped mushrooms
  • ½ tsp ground turmeric
  • ½ tsp ground ginger
  • ½ tsp ground garlic powder
  • 1 tsp coconut oil

Directions for tofu bowl

  1. Slice tofu and mushrooms on a cutting board.
  2. In a large frying pan, add kale, tofu and mushrooms in coconut oil.
  3. Add ground turmeric, ginger and garlic powder.
  4. Mix together and put on top of warmed rice stick noodles.
