Shrimp Cocktail

These beautiful shrimp cocktails are perfect for an afternoon outdoor lunch or appetizer before dinner. Plus, shrimp are low in carbohydrates. It takes about 15 minutes to make but is better chilled before serving.

Cook Time: 10 minutes

Ingredients for shrimp cocktail

  • 10 pieces of cleaned and deveined shrimp, chopped
  • ½ tsp coconut oil
  • 2 tbsp red onion, chopped
  • ½ cucumber, chopped
  • 2 tbsp parsley
  • ½ avocado
  • ½ cup sugar-free cocktail sauce

Directions for shrimp cocktail

  1. On a cutting board, chop red onion, cucumber, parsley, avocado, and shrimp.
  2. In a medium sized saucepan, fry chopped shrimp in coconut oil.
  3. Mix together all of the ingredients in a bowl and place in the fridge to chill for 30 minutes.
  4. Serve in stemmed glasses.
  5. Enjoy!
