Shrimp Ceviche
This dish can be served with low-carb chips, with a lettuce wrap, or a side of veggies.

Prep time: 5 minutes
Ingredients for shrimp ceviche
- 1.5 cups cooked baby shrimp
- 1/3 cup red onion, chopped
- 1/3 cup cucumber, diced
- 1.5 tsp chopped cilantro
- Lime juice from one lime
Directions for shrimp ceviche
- On a cutting board, chop red onion, cucumber and cilantro.
- Next, squeeze the lime.
- In a bowl, combine all of the ingredients and thoroughly mix together.
- Transfer to a nice dish and serve.
