Scrambled Tofu

This tofu scramble is an alternative to eggs.

Ingredients

  • 2 tbsp chopped red onion
  • A pinch of garlic powder
  • A dash of paprika
  • 1/4 tomato, diced
  • 150g firm tofu, crumbled
  • 1 tsp coconut oil

Makes 1

Directions

  1. Dice onion and tomato on a cutting board.
  2. In a medium sized pan, fry onion and tomato in coconut oil. Next add garlic and paprika and mix together.
  3. Once the onion has softened, crumble the tofu and heat for 5-7 min.
  4. Serve in a bowl or plate for breakfast.
