Red Pepper and Feta Omelet

In my house, Sunday is a day for eggs. This omelet is one of my son's very favorites. Adding feta instead of the usual cheddar cheese gives an extra creaminess. Try it for your next breakfast!

Makes 1 serving
Serving Size: 1 omelet
Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients for red pepper and feta omelet

  • 1 tbsp butter
  • 2 eggs, whisked
  • 1 oz feta cheese
  • ½ bell pepper, diced

Directions for red pepper and feta omelet

  1. Place butter in a large nonstick pan over medium heat. Once butter is melted, add eggs and roll the pan around so that they reach the entire diameter.
  2. Allow to cook, while sometimes sliding a spatula around the outside to keep it from sticking.
  3. Once the eggs start to bubble and turn white, add feta and pepper to one-half of the eggs.
  4. Once the eggs are mostly cooked through, use your spatula to flip the half without toppings onto the topping side. Let brown another minute or so on each side.
  5. Serve immediately.
