Mint Pesto

Enjoy this with some zucchini noodles, with chicken or vegetables or anything you like. It’s light and tangy and delicious!

Serves 6

Ingredients

  • 1/2 cup pine nuts
  • 1/2 cup mint leaves (firmly packed)
  • 1/4 cup olive oil
  • 1 clove garlic
  • 1 lemon

Directions

  1. Juice the lemon
  2. Remove the peel from the garlic clove and place all the ingredients into a blender or small food processor
  3. Blitz until combined. Enjoy!
