Mint Pesto

Enjoy this with some zucchini noodles, with chicken or vegetables or anything you like. It’s light and tangy and delicious!
Serves 6
Ingredients
- 1/2 cup pine nuts
- 1/2 cup mint leaves (firmly packed)
- 1/4 cup olive oil
- 1 clove garlic
- 1 lemon
Directions
- Juice the lemon
- Remove the peel from the garlic clove and place all the ingredients into a blender or small food processor
- Blitz until combined. Enjoy!
