Marinated Grilled Chicken with Cauliflower Rice

Take a trip around the world without leaving your kitchen and experience a Middle Eastern culinary creation. This recipe is made with unique spices that add a flavorful flair to every bite. The marinated grilled chicken gets paired with cauliflower rice, a veggie-filled rice alternative that adds both volume and nutrients to the dish. It's also an effective alternative to keep carbohydrates within a range that doesn't spike blood glucose levels.

But, if you aren't a fan of cauliflower, incorporate it into a portion of brown rice. Or, experiment with another vegetable "rice" option like broccoli, carrots, squash, or parsnip. Ingredients for marinated grilled chicken with cauliflower rice

  • 8 oz boneless chicken breast
  • 2 tbsp red wine vinaigrette dressing
  • 1 cup water
  • 15 oz raw riced cauliflower
  • 2 tbsp no salt added Moroccan seasoning blend
  • 2 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1 tbsp lemon juice
  • Parsley to taste
  • Salt to taste

Directions for marinated grilled chicken with cauliflower rice

  1. On a cutting board, pound the chicken breast until ¾ inch thick. Slice in half.
  2. In a container, marinate chicken with red wine vinaigrette dressing. Store in refrigerator overnight.
  3. On grill or stovetop on medium to high heat, cook chicken for 5 minutes on each side, or until the internal temperature reaches 165 degrees Fahrenheit.
  4. Remove from heat and cover with foil.
  5. In a large skillet on medium heat, combine cauliflower, water, Moroccan seasoning. Mix until thoroughly combined. Cook until tender, for approximately 10 minutes.
  6. Add olive oil and minced garlic to the cauliflower rice mixture. Mix until incorporated and cook for 3 minutes.
  7. Remove cauliflower rice from heat. Add lemon juice and salt. Mix until combined.
  8. Place chicken breast over rice. Serve topped with fresh parsley.
  9. Enjoy!
