Marinated Grilled Chicken with Cauliflower Rice
Take a trip around the world without leaving your kitchen and experience a Middle Eastern culinary creation. This recipe is made with unique spices that add a flavorful flair to every bite. The marinated grilled chicken gets paired with cauliflower rice, a veggie-filled rice alternative that adds both volume and nutrients to the dish. It's also an effective alternative to keep carbohydrates within a range that doesn't spike blood glucose levels.
But, if you aren't a fan of cauliflower, incorporate it into a portion of brown rice. Or, experiment with another vegetable "rice" option like broccoli, carrots, squash, or parsnip. Ingredients for marinated grilled chicken with cauliflower rice
- 8 oz boneless chicken breast
- 2 tbsp red wine vinaigrette dressing
- 1 cup water
- 15 oz raw riced cauliflower
- 2 tbsp no salt added Moroccan seasoning blend
- 2 tbsp olive oil
- 3 cloves fresh garlic, minced
- 1 tbsp lemon juice
- Parsley to taste
- Salt to taste
Directions for marinated grilled chicken with cauliflower rice
- On a cutting board, pound the chicken breast until ¾ inch thick. Slice in half.
- In a container, marinate chicken with red wine vinaigrette dressing. Store in refrigerator overnight.
- On grill or stovetop on medium to high heat, cook chicken for 5 minutes on each side, or until the internal temperature reaches 165 degrees Fahrenheit.
- Remove from heat and cover with foil.
- In a large skillet on medium heat, combine cauliflower, water, Moroccan seasoning. Mix until thoroughly combined. Cook until tender, for approximately 10 minutes.
- Add olive oil and minced garlic to the cauliflower rice mixture. Mix until incorporated and cook for 3 minutes.
- Remove cauliflower rice from heat. Add lemon juice and salt. Mix until combined.
- Place chicken breast over rice. Serve topped with fresh parsley.
