Grilled chicken on top of cauliflower rice.

Marinated Grilled Chicken with Cauliflower Rice

Take a trip around the world without leaving your kitchen and experience a Middle Eastern culinary creation. This recipe is made with unique spices that add a flavorful flair to every bite. The marinated grilled chicken gets paired with cauliflower rice, a veggie-filled rice alternative that adds both volume and nutrients to the dish. It's also an effective alternative to keep carbohydrates within a range that doesn't spike blood glucose levels.

But, if you aren't a fan of cauliflower, incorporate it into a portion of brown rice. Or, experiment with another vegetable "rice" option like broccoli, carrots, squash, or parsnip. Use a food processor to have veggie rice ready with a push of a button or buy it ready-to-go for your cooking convenience.
