Low-Carb Eggs Benedict

These egg benedicts use a large tomato as a base for the poached egg instead of toast.

Ingredients for low-carb eggs Benedict
- 1 slice large tomato
- 1 piece deli sliced ham
- 1 egg
- Salt and pepper to taste
Directions for low-carb eggs Benedict
- Cut a large tomato in half and slice one slice from the middle.
- Cut the deli ham into 4 pieces to layer on top of the tomato.
- Poach an egg, then place on top of the tomato and add salt and pepper to taste.
