Low-Carb Eggs Benedict

This lower-carb eggs Benedict recipe uses a large tomato as a base for the poached egg, instead of toast which reduces the carbohydrate content of traditional eggs Benedict.

Ingredients for low-carb eggs Benedict

  • 1 slice large tomato
  • 1 piece deli sliced ham
  • 1 egg
  • Salt and pepper to taste

Directions for low-carb eggs Benedict

  1. Cut a large tomato in half and slice one slice from the middle.
  2. Cut the deli ham into 4 pieces to layer on top of the tomato.
  3. Poach an egg, then place on top of the tomato and add salt and pepper to taste.
