Low Carb Breakfast Burritos

Replace a wrap with lunchmeat for this low carb breakfast.

Ingredients

  • 2 eggs
  • 1tbs. olive oil
  • 5 spices ham lunchmeat
  • 1/2 cup grape tomatoes, sliced
  • 1/2 cup spinach

Makes 1 serving

Directions

  1. In a medium sized pan, scramble eggs.
  2. On a cutting board, slice tomatoes in half.
  3. Add the spinach and sliced tomatoes to the cooking eggs.
  4. Fill each slice of lunchmeat with egg scramble mixture and wrap like a burrito.
