Kiwi Salad

Ingredients:

  • ½ kiwi, sliced
  • ¼ cup shredded carrots
  • ¼ cup shredded cabbage
  • 1 oz goat cheese, crumbled
  • 1 tbsp pistachios
  • 1 tbsp balsamic vinegar

Directions:

  1. Combine all ingredients (kiwi, carrots, cabbage, goat cheese, and pistachios) in a small bowl
  2. Mix in balsamic vinegar and stir until all ingredients are well coated
  3. Enjoy!
