Kiwi Salad

Are you tired of eating salad made with lettuce? This recipe features fiber-filled kiwi and protein-packed pistachios. It is fast to prepare and makes a great alternative to the more traditional lettuce filled salad.

Ingredients:
- ½ kiwi, sliced
- ¼ cup shredded carrots
- ¼ cup shredded cabbage
- 1 oz goat cheese, crumbled
- 1 tbsp pistachios
- 1 tbsp balsamic vinegar
Directions:
- Combine all ingredients (kiwi, carrots, cabbage, goat cheese, and pistachios) in a small bowl
- Mix in balsamic vinegar and stir until all ingredients are well coated
- Enjoy!
