Greek Chickpea Salad

This is one of my favorite dishes to throw together and eat for lunch throughout the week. Packed with vegetables and full of flavor, it leaves you satisfied and ready to take on the afternoon!

Ingredients for Greek chickpea salad

  • 1 cup chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 medium tomato, diced
  • ¼ cup feta cheese, crumbled
  • 1 red bell pepper, diced

Directions for Greek chickpea salad

  1. Place all ingredients in bowl and mix well.
  2. Serve immediately or refrigerate until ready to eat.
