Serving Size: ~ 1 1/4 cup

Ingredients:

  • 8 eggs
  • ½ cup Mexican blend shredded cheese
  • 2 tbsp chipotle ranch dressing
  • ½ tsp cumin
  • ½ tsp salt
  •   ¼ cup blue corn tortilla chips, crushed (approximately 1 serving of chips)

Directions:

  1. Preheat oven to 350 degrees
  2. Grease 8 x 10 inch baking dish
  3.   Whisk eggs, with fork, until smooth
  4. Mix in cheese, ranch, and cumin
  5. Pour egg mixture into baking dish
  6. Top with crushed tortilla chips
  7.   Bake at 350 degrees for approximately 25 minutes
