Cumin Roasted Vegetables

My family loves broccoli, but it took me a while to build up the courage to serve cauliflower. I was afraid no one would like it and that I would hear all kinds of complaints. Turns out, it is one of their very favorite vegetables. This seasoning when they are roasted adds a great flavor to the crunchy texture. Try it for an easy dinner side or even a healthy snack! Bonus points for fiber that will help keep you full and satisfied!

Makes 2 servings
Each serving is equal to 1 cup

Ingredients for cumin roasted vegetables

  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp cumin
  • 1 cup broccoli, chopped
  • 1 cup cauliflower, chopped

Directions for cumin roasted vegetables

  1. Preheat oven to 425°F
  2. Place cauliflower and broccoli on a baking sheet
  3. Sprinkle salt, pepper, and cumin evenly over the vegetables
  4. Place in oven and cook for 20-25 minutes or until vegetables are softened and broccoli is slightly browned and crispy
  5. Enjoy warm!
