Cucumber Egg Salad

Lunch can be a challenging meal to make if you want to take it on-the-go, do you make a sandwich or salad? This egg salad contains protein, a crunch, and it's refreshing to eat on a hot afternoon.

Ingredients for cucumber egg salad

  • 1/2 cup cucumber
  • 1 hard boiled egg
  • 1/2 tsp Trader Joes Green Goddess salad dressing
  • Salt and pepper to taste

Directions for cucumber egg salad

  1. On a cutting board, slice cucumber and a hard boiled egg (You can choose to make your own hardboiled eggs or buy them).
  2. Add cucumber and hard boiled egg to a bowl, top with salad dressing then add salt and pepper.
