Crockpot Meatloaf

Since the weather is still a bit cool, the crockpot can still come out! When I told my husband that I was going to attempt making meatloaf in the crockpot, I received quite the look. But would you believe me if I told you that at the end of that meal, the former skeptic said “Why would you make it any other way?”. It was that delicious! Give it a try for your next warm, healthy meal.

Cook Time: 4 hours
Ingredients for crockpot meatloaf
- 1 lb ground chicken
- 1 medium onion, diced
- ¼ cup old fashioned oats
- 2 tbsp ketchup, separated
- 1 medium carrot, grated
- 2 tbsp parmesan cheese
Directions for crockpot meatloaf
- Place all ingredients, except for one tablespoon of ketchup, in a large mixing bowl and blend well.
- Transfer into crockpot and top with remaining tablespoon of ketchup.
- Cook on high for 2-3 hours, or low for 4-6 hours.
- Serve immediately.
