Cottage Cheese Delight
Cottage cheese is one of my favorite foods. This recipe turns simple cottage cheese into a refreshing and filling salad. Enjoy this salad either as a snack or side dish.
Ingredients:
- ½ cup cottage cheese (my personal favorite: Breakstone 2% Cottage Cheese)
- ¼ cup cherry tomatoes
- ¼ cup radishes
- ¼ cup cucumber
- 1 large lettuce leaf
- Pinch of pepper
Directions:
- Cut cherry tomatoes in half
- Dice radishes and cucumber
- In a small bowl combine cottage cheese on vegetables
- Place cottage cheese salad mixture on top of lettuce leaf
- Top with pinch of pepper
