Cocoa Coconut Cookies

If you love chocolate and coconut, this recipe is sure to be a new favorite! To save time, the cookie batter can be prepared ahead of time. Enjoy this treat with a tall glass of almond milk or a cup of hot tea.

Servings: 10 cookies
Serving size: 1 cookie

Ingredients:

  • 1/2 cup coconut flakes, unsweetened
  • ¼ cup coconut oil
  • 2 eggs
  • ¼ cup Truvia Baking Blend
  • 2 tbsp cocoa dry powder, unsweetened
  • ½ tsp baking powder
  • 1/8 tsp salt

Directions:

  1. Preheat oven to 350 degrees
  2. Coat cookie sheet with baking spray
  3. In a medium size mixing bowl combine all ingredients
  4. Use a fork to stir ingredients until well combine
  5. Allow ingredients to sit in refrigerator for 1 to 2 hours before baking
  6. Use a  small spoon to drop batter onto baking sheet
  7. Bake cookies at 350 degrees for 10 minutes
