Cauliflower, Blueberry & Tomato Salad

This salad is festive and fast to prepare. It features red, white, and blue ingredients which make it a great dish for your fourth of July celebration.

Serving size: ~ ¾ cup

Ingredients for cauliflower, blueberry & tomato salad:

  •   ¾ cup cauliflower rice
  • ½ cup grape tomatoes, cut in half
  • ¼ cup blueberries
  • 1 tbsp balsamic vinegar
  • 2 tsp Dijon mustard

Directions for cauliflower, blueberry & tomato salad:

  1. Combine cauliflower rice, grape tomatoes, and blueberries in a small bowl
  2. In a separate bowl, prepare the dressing. Whisk together balsamic vinegar and Dijon mustard until well combined
  3. Pour dressing over salad
  4.   Gently stir salad until all ingredients are coated in dressing

    Sounds interesting. Never thought of mixing something like that together. I’ve had fruit salads, Cesar salads etc but no mixture such as that. Very interesting.
