Cauliflower, Blueberry & Tomato Salad

This salad is festive and fast to prepare. It features red, white, and blue ingredients which make it a great dish for your fourth of July celebration.

Serving size: ~ ¾ cup
Ingredients for cauliflower, blueberry & tomato salad:
- ¾ cup cauliflower rice
- ½ cup grape tomatoes, cut in half
- ¼ cup blueberries
- 1 tbsp balsamic vinegar
- 2 tsp Dijon mustard
Directions for cauliflower, blueberry & tomato salad:
- Combine cauliflower rice, grape tomatoes, and blueberries in a small bowl
- In a separate bowl, prepare the dressing. Whisk together balsamic vinegar and Dijon mustard until well combined
- Pour dressing over salad
- Gently stir salad until all ingredients are coated in dressing
