Butternut Squash Shrimp Dish
I love putting items together into a pot and creating a full meal. Garlic is always a nice addition to shrimp to bring out the flavor. This recipe can serve four people with each portion being a cup of the completed dish.
Makes 4 servings
Serving size: 1 cup
Ingredients for butternut squash shrimp dish
- 12 pieces cocktail shrimp
- 2 cups butternut squash
- 2 cups green beans
- 1 tsp minced garlic
- 1 tsp olive oil
- salt and pepper to taste
Directions for butternut squash shrimp dish
- On a medium sized pan, cook green beans until they soften, about 15 minutes.
- Next, add cubed butternut squash and cook for an additional 10 minutes.
- In a small pan, cook shrimp in olive oil, adding the garlic.
- Once the shrimp has finished cooking, mix together with the green beans and butternut squash then salt and pepper to taste.
