Butternut Squash Shrimp Dish

I love putting items together into a pot and creating a full meal. Garlic is always a nice addition to shrimp to bring out the flavor. This recipe can serve four people with each portion being a cup of the completed dish.

Makes 4 servings
Serving size: 1 cup

Ingredients for butternut squash shrimp dish

  • 12 pieces cocktail shrimp
  • 2 cups butternut squash
  • 2 cups green beans
  • 1 tsp minced garlic
  • 1 tsp olive oil
  • salt and pepper to taste

Directions for butternut squash shrimp dish

  1. On a medium sized pan, cook green beans until they soften, about 15 minutes.
  2. Next, add cubed butternut squash and cook for an additional 10 minutes.
  3. In a small pan, cook shrimp in olive oil, adding the garlic.
  4. Once the shrimp has finished cooking, mix together with the green beans and butternut squash then salt and pepper to taste.
