Brussels Sprout Salad

Looking for a new way to spruce up that plain old salad? Here is an easy, quick, and healthy recipe that can even help you sneak in some extra fiber. Make it ahead of time and place it in the refrigerator to give the apple juice some time to marinate. You can also add your own greens to bulk it up further if you wish! Add your favorite salad dressing on top for even more flavor.

Ingredients for brussels sprout salad

  • 2 cups brussels sprouts, thinly sliced
  • 1 medium apple, shredded
  • 1 medium carrot, shredded

Directions for brussels sprout salad

Use a cheese grater to shred apple and carrot.Place in a large bowl and toss well.Serve immediately or refrigerate until ready to serve.
