3-Bean Turkey Crockpot Chili

There's nothing better on a chilly day than the smell of delicious soup cooking when you walk in the door. This chili is full of veggies, fiber, and low-fat ground turkey, all important for healthy diabetes eating patterns. 

Even better, it takes very little time to prep and can be cooked during your workday. Finally, you'll find that the carbohydrate content is low, allowing room in your eating plan to add your favorite crackers!

Ingredients for 3-bean turkey crockpot chili

  • 1 lb lean ground turkey
  • 2 green bell peppers, seeded and diced
  • 1 can black beans, rinsed
  • 1 can hot chili beans
  • 1 can red kidney beans, rinsed
  • 3 cans stewed tomatoes
  • 1 large yellow onion, diced
  • 3 tbsp minced garlic
  • 3 tbsp chili powder
  • 3 tsp ground cumin
  • 1 tsp ground pepper
  • 1 cup water

Directions for 3-bean turkey crockpot chili

  1. Add all ingredients except turkey to the crockpot or slow cooker. Stir to combine.
  2. Break up raw ground turkey into quarter-size pieces. Stir into crockpot or slow cooker.
  3. Set on crockpot or slow cooker on low, allowing to cook for 6-8 hours.
  4. Garnish as desired before serving.
