Marvelous Banana Muffins

If you’re like me and hate wasting produce then you’ll appreciate this recipe which features overly ripened bananas. These muffins are great to enjoy following a morning workout. For a more complete meal, enjoy the muffins with some fresh berries and a hard-boiled egg.

Ingredients for banana muffins

  • 2 small very ripe bananas
  • 2 large eggs
  • ½ cup cinnamon applesauce
  • ¼ cup creamy peanut butter
  • ¾ cup whole wheat flour
  • ¼ cup Truvia Baking Blend
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt

Directions for banana muffins

  1. Preheat oven at 375 degrees
  2. Line muffin tin with paper liners
  3. Stir all ingredients together using a handheld mixer or stand mixer until ingredients are well combined
  4. Pour the muffin batter into muffin lined pan cups
  5. Bake muffins for 18 minutes
