Marvelous Banana Muffins
If you're like me and hate wasting fresh produce, then you'll appreciate this recipe which uses overly ripened bananas. These muffins are great to enjoy following a morning workout. Enjoy the muffins with fresh berries and a hard-boiled egg for a more complete meal.

Ingredients for banana muffins
- 2 small very ripe bananas
- 2 large eggs
- ½ cup cinnamon applesauce
- ¼ cup creamy peanut butter
- ¾ cup whole wheat flour
- ¼ cup Truvia Baking Blend
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
Directions for banana muffins
- Preheat oven to 375 degrees Fahrenheit.
- Line a muffin tin with paper liners.
- Stir all ingredients together using a handheld mixer or stand mixer until ingredients are well combined.
- Pour the muffin batter into the lined muffin tin.
- Bake muffins for 18 minutes or until golden and baked through.
