Avocado Chicken Salad

You can eat this salad plain, on top of a rice cake, or on a slice of whole-wheat toast.

Prep time: 5 minutes

Ingredients for avocado chicken salad

  • 1/2 mini cucumber, diced
  • 1/4 avocado, diced
  • 6 cherry tomatos, diced
  • 1/2 cup premium chunk chicken breast
  • salt and pepper to taste

Directions for avocado chicken salad

  1. On a cutting board, dice cucumber, avocado and tomatoes.
  2. Add chicken breast to a bowl and break up using a fork.
  3. Next, add chopped veggies salt and pepper to taste and mix together.
