Zucchini Ribbon Salad

Serves 3
Ingredients
- 2 small zucchini
- 1 lemon
- 1/4 cup mint leaves (stems removed)
- 1 tbsp olive oil
- 1/4 cup feta
- 2 tbsp pine nuts
Directions
- Slice the zucchini into ribbons using a vegetable peeler and place them in a bowl.
- Finely chop the mint leaves and add them to a small jar with the juice of one lemon and the olive oil. Put the lid on and shake well.
- Crumble the feta over the top of the zucchini ribbons, add the pine nuts and pour over the dressing, toss to combine, enjoy!
