Zucchini Ribbon Salad

A fresh and light way to enjoy zucchini and you’ll have it finished in just minutes!

Serves 3


  • 2 small zucchini
  • 1 lemon
  • 1/4 cup mint leaves (stems removed)
  • 1 tbsp olive oil
  • 1/4 cup feta
  • 2 tbsp pine nuts


  1. Slice the zucchini into ribbons using a vegetable peeler and place them in a bowl.
  2. Finely chop the mint leaves and add them to a small jar with the juice of one lemon and the olive oil. Put the lid on and shake well.
  3. Crumble the feta over the top of the zucchini ribbons, add the pine nuts and pour over the dressing, toss to combine, enjoy!
