Veggie Scramble

If you’re lacking in the vegetable department, this recipe will help get you closer to reaching the recommend daily vegetable servings. This dish can be enjoyed as a breakfast, lunch, or dinner entrée. For a more complete meal, add a side of fresh berries, tomato slices, or fresh avocado.

Servings: 2
Serving size: approximately 1 ½ cups

Ingredients:

  • 1/2 cup riced cauliflower
  • 1 tsp. olive oil
  • 5 eggs
  • 1/2 cup grape tomatoes, cut in quarters
  • 1/2 cup shredded carrots
  • 1/4 cup guacamole
  • 1/4 cup salsa
  • 1 tbsp sour cream
  • 1 tbsp ranch dressing

Directions:

  1. In a medium size skillet, heat riced cauliflower and olive oil over medium heat for 1 to 2 minutes
  2. In a medium size bowl whisk together eggs, grape tomatoes, shredded carrots, salsa, and guacamole
  3. Pour egg mixture over riced cauliflower
  4. Heat egg mixture over medium heat until eggs are set, approximately 7-9 minutes
  5. In a small bowl, combine sour cream and ranch dressing
  6. Top egg mixture with sour cream and ranch dressing sauce
