Veggie Scramble
If you're lacking in the vegetable department, this recipe will help get you closer to reaching the recommend daily vegetable servings. This dish can be enjoyed as a breakfast, lunch, or dinner entrée. For a more complete meal, add a side of fresh berries, tomato slices, or fresh avocado.

Serving size: approximately 1 ½ cups
Ingredients:
- 1/2 cup riced cauliflower
- 1 tsp. olive oil
- 5 eggs
- 1/2 cup grape tomatoes, cut in quarters
- 1/2 cup shredded carrots
- 1/4 cup guacamole
- 1/4 cup salsa
- 1 tbsp sour cream
- 1 tbsp ranch dressing
Directions:
- In a medium size skillet, heat riced cauliflower and olive oil over medium heat for 1 to 2 minutes
- In a medium size bowl whisk together eggs, grape tomatoes, shredded carrots, salsa, and guacamole
- Pour egg mixture over riced cauliflower
- Heat egg mixture over medium heat until eggs are set, approximately 7-9 minutes
- In a small bowl, combine sour cream and ranch dressing
- Top egg mixture with sour cream and ranch dressing sauce
