Veggie Casserole

Serving Size: ~ 1½ cups
Ingredients for veggie casserole:
- 1 tbsp olive oil
- 2 ½ cups riced cauliflower
- 3 cups Morning Star ground meat
- 3 cups marinara sauce
- 1 cup canned mushrooms
- 1 cup ricotta cheese
- 1 cup part skim shredded mozzarella cheese
- ¼ tsp salt
- Pinch of pepper
Directions for veggie casserole:
- Preheat oven to 350 degrees
- In a medium-size skillet heat olive oil and riced cauliflower over medium heat
- In a separate medium-size skillet heat Morning Star ground meat over medium heat
- Stir in mushrooms and marinara sauce
- Use a medium size mixing bowl to combine ricotta cheese, mozzarella cheese, and salt, pepper
- Assemble casserole using a 9x13 inch casserole dish
- Meat mixture
- Rice cauliflower mixture
- Cheese mixture
- Repeat until there are 3 layers
- Bake casserole at 350 degrees for 30-40 minutes
