Veggie Casserole

Serving Size: ~ 1½ cups

Ingredients for veggie casserole:

  • 1 tbsp olive oil
  • 2 ½ cups riced cauliflower
  • 3 cups Morning Star ground meat
  • 3 cups marinara sauce
  • 1 cup canned mushrooms
  •   1 cup ricotta cheese
  • 1 cup part skim shredded mozzarella cheese
  •   ¼ tsp salt
  • Pinch of pepper

Directions for veggie casserole:

  1. Preheat oven to 350 degrees
  2. In a medium-size skillet heat olive oil and riced cauliflower over medium heat
  3. In a separate medium-size skillet heat Morning Star ground meat over medium heat
  4. Stir in mushrooms and marinara sauce
  5.   Use a medium size mixing bowl to combine ricotta cheese, mozzarella cheese, and salt, pepper
  6. Assemble casserole using a 9x13 inch casserole dish
  7. Meat mixture
  8. Rice cauliflower mixture
  9. Cheese mixture
  10. Repeat until there are 3 layers
  11. Bake casserole at 350 degrees for 30-40 minutes
