Veggie Bacon Roll

If you are in need of a vegetarian-friendly appetizer, give this recipe a try! It features veggie bacon, which in my opinion is delicious! It is also great for those of you who follow a low carb/reduced carb diet, as each serving has just 3 grams of carbs.

Ingredients for veggie bacon roll

  • 1 slice organic American Cheese (brand used for this recipe: Horizon Organic)
  • 2 slices veggie bacon strips (brand used for this recipe: Morning Star Farms)
  • 2 tsp olive oil mayo
  • 2 grape tomatoes

Directions for veggie bacon roll

  1. Heat bacon in the microwave for 45 seconds (don’t let the bacon get too crispy)
  2. Top veggie bacon with ½ slice of cheese and a thin layer (1 tsp) of mayo
  3. Roll bacon tightly
  4. Top bacon roll with a grape tomato and secure with a toothpick
