Vegetarian Scramble

Ingredients:

  • 2 eggs, beaten
  • ½ cup meatless ground meat alternative (brand used for this recipe: Morning Star Farms Grillers Crumbles)
  • ¼ cup vegetarian refried beans
  • ¼ cup avocado, diced

Directions:

  1. Using a nonstick pan, heat meatless ground meat alternative on medium heat for 2 to 3 minutes
  2. Add in vegetarian refried beans and eggs
  3. Stir all 3 ingredients together
  4. Continue to heat mixture on medium heat for another 2 to 3 minutes
  5. Gently stir in diced avocado
  6. Enjoy!
