Vegetarian Mexican Pizza

Pizza and Mexican food are 2 of my favorite cuisines. This recipe brings together the best of both worlds. A corn tortilla shell is used as the pizza crust in place of using traditional pizza dough.


  • 1 corn tortilla
  • 1 tsp. olive oil
  • 2 tbsp. chunky salsa
  • ¼ cup Mexican blend shredded cheese
  • 2 tbsp. guacamole


  1. Preheat oven to 350 degrees
  2. Brush tortilla with olive oil
  3. Heat tortilla on baking sheet for approximately 3-5minutes (until slightly crisp)
  4. Take tortilla out of oven
  5. Top tortilla with chunky salsa and shredded cheese
  6. Place tortilla back in oven approximately 3 minutes (until cheese melts)
  7. Take tortilla out of oven and top with guacamole

    Hi TheLongPointGirl,
    Thank you for your questions. The recipe was based on using a 6 inch tortilla. To help prevent guacamole from spoiling I would squeeze some fresh lemon juice on top. I hope that helps!

    Hi. I bought pre-made guacamole for this recipe. How do I store it so it doesn’t turn brown? How long is it good for? I don’t want to throw it out if I don’t need to. Thanks!
