Vegetarian Baby Bell Scoops

This recipe is sure to be a crowd pleaser. It is intended to be served as an appetizer, but it also makes a great afternoon snack. Try serving these Baby Bell Scoops in place of higher carb nachos.

Ingredients:

  • 3 baby bell peppers
  • ½ cup Morningstar Farms Grillers Crumbles (ground beef meat alternative)
  • ¼ cup shredded cheddar cheese
  • 2 tbsp. sour cream
  • 1-2 tsp. olive oil

Directions:

  1. Preheat oven to 350 degrees
  2. Cut baby bell peppers in half
  3. Brush with olive oil
  4. Place on baking sheet
  5. Bake at 350 for approximately 7 minutes
  6. Remove from oven
  7. Fill baby bells with Morningstar Farms Grillers Crumbles
  8. Top with cheddar cheese
  9. Put back in oven for another 7 to 10 minutes (until cheese melts)
  10. Remove from oven and top with sour cream
