Tofu and snap peas
Add tofu to a dish for a meat alternative.
Ingredients
- 3/4 cup snap peas
- 1/2 cup firm tofu, cubed
- 1/4 cup onion, diced
- 1/4 cup mushrooms, diced
- 1 tsp. soy sauce
- 1 tbs. coconut oil
Makes 1 serving
Directions
- On a cutting board, cut tofu into cubes, dice onion and mushrooms.
- Fry snap peas, onion and mushrooms in coconut oil on medium heat for 10-15 minutes.
- Once the onions are golden brown, add tofu and heat for 5-7 minutes.
- Continue to rotate the tofu while cooking so all sides are browned.
- Add fried veggies into a bowl, add tofu, and season with soy sauce.
