Tofu and snap peas

Add tofu to a dish for a meat alternative.

Ingredients

  • 3/4 cup snap peas
  • 1/2 cup firm tofu, cubed
  • 1/4 cup onion, diced
  • 1/4 cup mushrooms, diced
  • 1 tsp. soy sauce
  • 1 tbs. coconut oil

Makes 1 serving

Directions

  1. On a cutting board, cut tofu into cubes, dice onion and mushrooms.
  2. Fry snap peas, onion and mushrooms in coconut oil on medium heat for 10-15 minutes.
  3. Once the onions are golden brown, add tofu and heat for 5-7 minutes.
  4. Continue to rotate the tofu while cooking so all sides are browned.
  5. Add fried veggies into a bowl, add tofu, and season with soy sauce.
