Tofu Cheesecake

A vegan alternative to a traditional cheesecake.

Ingredients

  • 1 package of tofu
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 4 packets of truvia
  • 2 graham crackers
  • 1 tbsp butter

Makes 8 servings

Directions

  1. Preheat oven to 350F.
  2. Blend ingredients in a medium sized bowl using an electric mixer.
  3. Crush graham crackers into a fine powder and line a pie shell, forming a crust with the butter and crumbs.
  4. Add the blended tofu mix on top of the crust and put it into the oven.
  5. Bake for 45-60 min.
