Stuffed Avocado

Avocados are such a natural bowl that you can add so many delicious items to. For this recipe, we're adding lots of veggies. Feel free to adapt the recipe and add in a protein of choice if you would like. You can add an egg to compliment the recipe for breakfast or add tuna for lunch.

Makes 1 serving

Ingredients for stuffed avocado

  • 1/2 avocado
  • 1/4 tomato, large
  • 1/8 tsp diced red onion
  • 3 basil leaves
  • 1/2 tsp parmesan cheese

Directions for stuffed avocado

  1. Cut an avocado in half.
  2. On a cutting board, dice tomato and red onion, then cut up basil.
  3. Mix together in a small bowl, then fill the avocado.
  4. Top with parmesan cheese.
