Stuffed Avocado
Avocados are such a natural bowl that you can add so many delicious items to. For this recipe, we're adding lots of veggies. Feel free to adapt the recipe and add in a protein of choice if you would like. You can add an egg to compliment the recipe for breakfast or add tuna for lunch.
Makes 1 serving
Ingredients for stuffed avocado
- 1/2 avocado
- 1/4 tomato, large
- 1/8 tsp diced red onion
- 3 basil leaves
- 1/2 tsp parmesan cheese
Directions for stuffed avocado
- Cut an avocado in half.
- On a cutting board, dice tomato and red onion, then cut up basil.
- Mix together in a small bowl, then fill the avocado.
- Top with parmesan cheese.
