Stuffed Avocado

Try this take on a tuna sandwich and add the filling into an avocado.

Ingredients

  • 1/2 can tuna
  • 1 medium stalk celery, diced
  • 1/4 cup diced cucumber
  • 1/4 cup diced carrots
  • 1 avocado
  • pepper to taste

Makes 2 servings

Directions

  1. In a medium sized bowl, empty tuna and mash with a fork to separate.
  2. On a cutting board, dice cucumber and carrots.
  3. Add diced veggies and pepper to the tuna.
  4. Cut the avocado in half, remove the pit and distribute the tuna mixture between the two avocado halves.
