Spinach Skillet

Serving size: 1.5 cups


  • 2 tbsp olive oil
  • 1 tbsp less sodium soy sauce
  • 8 oz. shrimp
  • 1/2 cup shelled edamame
  • 1/4 cup chopped walnuts
  • 3/4 bag fresh spinach


  1. Using a medium size skillet, heat olive oil and soy sauce on medium heat for 1 to 2 minutes
  2. Add to skillet: shrimp, edamame, walnuts, and spinach
  3. Cook on medium heat for 7 to 10 minutes
  4. Enjoy!
