Slow Cooker White Bean and Chicken Chili
Warm and hearty and easy to prepare in your slow cooker. This chili is delicious and mild in heat making it perfect for the whole family to enjoy.
Ingredients
- 1 white onion, chopped
- 4oz can Green Chilies
- 2 (15oz) cans Reduced-Sodium Great Northern White Beans
- 2 garlic cloves, minced
- 4 Skinless Boneless Chicken Breasts
- 1/2 tablespoon cumin
- 1 teaspoon chili powder
- 1/4 tsp salt
- 1/4 tsp paprika
- 6 cups water
- Juice of 1/2 fresh lime
- 1/4 cup cilantro
Makes 6
Directions
- Place onions, green chilies, beans and garlic in the bottom of your slow cooker.
- Lay chicken breasts on top.
- In a small bowl mix together cumin, chili powder, salt and paprika.
- Sprinkle spices over the top of the chicken.
- Add in water and lime juice.
- Cook on HIGH for 4 hours or on LOW for 6-8 hours.
- Gently pull apart chicken into shreds before serving. Serve chili hot in bowls garnished with fresh chopped cilantro.
